Oatmeal Chocolate Chip Cookies
Gluten Free with Vegan option
I make these cookies on the regular. It’s my way to indulge AND be good to my body and mind. I have a major sweet tooth but have replacing my old, bad habits with a great replacement. Diets don’t work, I continue to monitor my lifestyle and adjust according to my needs and understanding at the time. With these little cookies, I feel so happy and without any guilt. My blood sugar can maintain stability by using alternative sweeteners and using nut flour to balance out the carbohydrates. I like monk-fruit or coconut sugar in this recipe, but feel free to experiment. This is also a very forgiving recipe, so please, play with your food and get creative. We are here to have fun, remember?!
Easy to adjust to meet your mood or what’s your my pantry. No chocolate chips, no problem! You can always have some dried fruit and nuts instead, or go for simple oatmeal.
Preheat your oven to 325 degrees
Mix in a bowl: (I use a kitchen aid but not necessary)
- 1 cup Fat (butter, coconut oil, canna butter, or a combination of them)
- 1/2-3/4 cup Coconut or Monkfruit Sugar
Once well blended, add 2 Eggs and 1-2 t vanilla extract
Sift in another bowl:
- 1 1/4 cup gluten free flour. (I like a general all purpose rice flour mix or make it paleo with almond or hazelnut flour. You can also substitute 1/4 flour with GF pancake mix to make them a little bit cakey)
- 1/2 t Himalayan salt
- 1 T Cinnamon or a spice mix of your choice (Cardamom, nutmeg, ginger)
- 1/2 t Baking soda
Pour the dry mixture into the wet ingredients. Mix well.

Add in:
- 3 cups oatmeal (Any type, I love organic steel cut)
Then fold in by hand:
- 1 cup chocolate chips (or dried fruit)
Optional:
- 1/2 cup chopped pecans or your favorite nut
Scoop:
Use a small scooper to make your cookie mounds, by packing the dough pretty firmly into it or use a spoon to make free form balls.
Bake at 325 degrees for 12-14 minutes until they are golden.
Cool for 5 minutes and transfer to a cooling rack and store in a glass container.


Yields approximately 48 cookies.

I’ve recently tried these cookies, they were incredibly easy to make and I further was able to make the entire batch in between my classes. Especially as a type one diabetic, the balance of the protein and alternative sweeteners gave me guilt-free treats that actually gave me sustained energy without causing a blood sugar spike.
Yes, these are great for those watching their blood sugar levels and sugar intake in general. It makes me happy you made them…quick and easy…and good for you, how can you beat that?!
